COLD CHAIN STANDARDHOW WE HANDLE IT
Four checks, every order
Whole fish, fillets, prawns and small fish each pass the same four checks.
Follow them and you know exactly what happened before your order reached the door.
AT THE TABLE
Keep the cooking simple
Let the species lead: high heat for prawns, gentle steam for whole fish and a dry pan for fillets.

Hot pan, short time
Sear over high heat until the shells turn bright. A minute on each side is usually enough.

Steam it whole
Score the thickest part, steam for eight minutes and finish with hot oil and spring onion.

Pat dry, then sear
Dry the surface well so the fillet browns instead of steaming, and turn it only once.
GOOD TO KNOW
Before the seafood reaches your table
How should chilled seafood arrive?
It should arrive cold, sealed and with product-specific storage guidance. Refrigerate it promptly and follow the label.
What should I do with frozen seafood?
Keep it frozen until you are ready to thaw it safely, and always follow the product label.
Why does the exact region matter?
Species and coastal region help explain flavour, texture and seasonality. Every product page names both.
Which ranges do you carry?
Four: prawns and shrimp, fish fillets and portions, whole fish and whitebait, and the premium selection.
What if a package arrives damaged or warm?
Do not use it automatically. Check the product condition and contact us for product-specific advice.
